VEGGIE SAUSAGE ASIAN TUMBLE 1

VEGGIE SAUSAGE ASIAN TUMBLE

A stir-fry of peppers, onion, bok choy and Mann’s Sugar Snap Peas with Gimme Lean Ground Sausage Style. Fresh turmeric root adds an earthy flavor. Tossed with House Foods Tofu Shirataki Macaroni, soy sauce, a little sugar then topped with toasted white and black sesame seed.

Makes 4-6 servings

2 T. sesame oil

1 jumbo green pepper, cored and cut into 3/4 inch squares

1 jumbo sweet onion; cut ends off, cut in half from end to end, peel, then cut each half in half again (from end to end), then cut each segment crosswise into 1/2 inch wide quarter rings

salt to taste

14 oz. tube thawed soy sausage by Gimme Lean Lightlife

2 T. additional sesame oil

freshly ground black pepper

1 bunch baby bok choy; wash well, cut two inches up from bottom like you do celery and discard bottom, then cut crosswise into 1 inch segments

10 oz. bag froz. stringless sugar snap peas

1 finger size piece fresh turmeric root, peeled and finely grated

8 oz. bag Tofu Shiritaki noodle substitute, macaroni style – rinse well, drain, cook in salted boiling water 2-3 minutes, drain

1/4 c. soy sauce

2 t. sugar

1 T. white sesame seeds and 1 T. black sesame seeds, toasted

In extra lg. skillet over medium-high heat melt oil.

Add green pepper, onion and a little salt. Saute till edges soften. Push veggies to one side of the skillet.

Add soy sausage by pinching off pieces into skillet. Break apart further with side of metal spoon or pancake turner. Let the skillet smoke a little, turning when charred in places.

Drizzle 2 T. additional sesame oil over soy sausage, toss, add freshly ground black pepper to taste and continue cooking till browned. Now mix into the veggies in skillet.

Add bok choy. Cook about 3 minutes, stirring often.

Add sugar peas and turmeric. Stir and cook another 3 minutes.

Now add macaroni, soy sauce and sugar. Stir well, heat through and remove from heat.

Heat dry skillet over medium heat. Add both white and black sesame seeds. Watch carefully. When one or two pop, shake skillet till the white seeds are lightly browned. Transfer immediately to dry plate, so they don’t burn.

Plate the veggies and sausage, sprinkle the sesame seeds over the top and serve.

Notes: This is a great tasting, hearty stir-fry. The toasted sesame seeds, considering their tiny size, impart a rich nutty flavor to the dish.
