TRIPLE GLO SALAD DRESSING
Three RAW REV GLO Bars BY RAW REVOLUTION blended with a high fat coconut milk, white Balsamic glaze, and sea salt! That’s all you need to make one of the most exquisite creamy salad dressings on the planet!
Makes 2-3/4 cups
14 oz. can Roland Classic Coconut Milk, at room temperature (chosen for its high fat content)
3 RAW REV GLO BARS, finely chopped
- 1, Mixed Nuts, Caramel & Sea Salt bar
- 1, Peanut Butter, Dark Chocolate & Sea Salt bar
- 1, Creamy Peanut Butter & Sea Salt bar
1/2 c. white Balsamic glaze – I used Gia Russa brand – (don’t use straight vinegar or Balsamic reduction; the glaze is thick, which we need for the ‘smooth’)
1 t. sea salt, plus to taste
Combine the coconut milk and chopped bars in blender container, adding the coconut first – so the bars don’t clump up under the blades. Process on low-speed till mixed well; stir up from bottom, then continue on high-speed till creamy.
Add Balsamic glaze and salt. Process on high-speed till ultra creamy.
Transfer to covered container and refrigerate several hours – overnight is best – to thicken the dressing.
Spoon over salad of greens.
Notes: In keeping with the sea salt theme of the bars, I topped my salad with Blue Diamond BOLD Salt & Vinegar Almonds. Place 6 oz. can nuts in food processor, then process till crumbly and the oil just starts to extract from the nuts, whereby they begin to clump up a little. Use as desired on the salads, then place the remainder in a jar to use as topping for other recipes.
The three bars combined expertly in this dressing, expressing freely each ones flavor uniqueness, while teaming to create something new, elegant and exciting.
The nut crumbles offer another layer of salt and a tang that create varying levels of taste sensations in every bite of the salad.
Another use for this salad dressing:
As you know, refrigeration turns the dressing thick – thick enough to be spread on bread. If you like pumpernickel bread, spread 2 slices liberally with the dressing. Top liberally with the nut crumbles. Close and eat. It’s a little reminiscent of canned brown bread that long ago was popular in the grocery. I don’t know if they still sell it. But this little sandwich was delightful.
