TERIYAKI VEGAN DUCK SUB
Wow, who would think Vegan Duck? It’s for real. In this sub, teamed up with sauteed sweet onion, fresh radishes, cilantro and a mustard teriyaki sauce, the duck rises to a whole new level! Cruelty-free boys and girls!
Makes 3
2 T. vegetable oil
1 lg. sweet onion, cut in half from end to end, then crosswise into 1/4 inch wide half rings
salt and pepper
7 oz. pkg. Vegan Teriyaki Duck, thawed – cut into strips on the diagonal – from May Wah Vegetarian Market online,
1/4 c. prepared yellow mustard
Teriyaki Sauce (I used Kikkoman’s)
3 Steak and Sausage sub rolls, lightly broiled on insides
sev. fresh radishes, sliced ultra thin
sev. sprigs fresh cilantro – leaves and stems
Heat large skillet over medium heat. Saute onion in oil and salt and pepper to taste till partially wilted.
Add Vegan Duck, and a little more salt and pepper to taste. Saute till onion is soft and caramelized to your liking.
Place mustard in small cup. Add Teriyaki Sauce as desired – not too thin. Stir to incorporate.
Spread insides of sub rolls with mustard mix.
On one half of sub rolls place radish slices, then top with lots of cilantro.
On second half of sub rolls place Vegan Duck and onion saute.
Close sub, cut and serve.
Notes: Vegan Duck? May Wah makes it and makes it good. I was frankly surprised, but now that I’ve tried it and liked it, I’ll find other ways to use it in recipes. The flavor, texture and after-taste all good!
