SWEET VEGGIE CREME FRAICHE
A simple recipe for creme fraiche using only four ingredients! You’ll love it!
Makes 2-1/3 cups
12.3 oz. pkg. Silken style extra firm tofu
1-1/2 c. Rich’s Non-Dairy Whip Topping (it comes in liquid form)
2 T. fresh lemon squeeze
1/4 t. salt
Break tofu into pieces as you place it into food processor.
Add Rich’s Non-Dairy Whip Topping, then process till smooth.
Add salt and fresh lemon juice. Process till incorporated, then for about 3-5 minutes, on and off to keep the unit from overheating. Watch for when mix pulls away from the main post of the processor as it turns.
Transfer to covered container and refrigerate several hours or overnight to achieve the correct degree of thickness and mature the flavors.
Notes: This is a beautiful creme fraiche. Serve over any dessert, or top the jam on your toast with a spoonful.
I also created a luxurious salad dressing by mixing 3/4 cup Wish-Bone Russian Salad Dressing, with 1/2 cup Sweet Veggie Creme Fraiche and salt and pepper to taste.
Toasted pumpernickel bread, spread with strawberry preserves, topped with creme fraiche, then sprinkled with cinnamon!
Torn romaine lettuce, cut red grapes, sauteed portobello mushrooms with roasted peppers, steamed asparagus spears and sweet onion slices drizzled with Russian Creme Fraiche Dressing. Superb!
