BAKED TOFU SANDWICH
Even though this sandwich is cooked, it’s quick and easy. Fried baked tofu with veg mozzarella cheese and veg ham. Put together on a pan-fried hot dog bun spread with ketchup, mustard and veg mayo. Napkins please!
1 lg. hot dog bun split open all the way through
vegetable oil for frying
1 pkg. Organic Baked Savory Tofu by Trader Joe’s
salt and pepper
2 slices veggie ham – I used Yves brand
1 dairy free mozarella singles slice – I used Tofutti brand
Each package of Baked Tofu contains 2 blocks. I cut each block horizontally in half, yielding 4 squares total, which would make 4 sandwiches. For this recipe I use 1 square.
Drizzle a little oil in a medium-heated skillet and roll it around evenly – just a little bit.
Place the open hot dog bun flat in the skillet – cook till nicely browned. Flip it over and brown the other side of both halves. Remove to board.
Drizzle a little more oil in skillet.
Place the tofu square in skillet, salt and pepper just a little, then fry on one side till golden.
Flip it over, then top with one slice veggie ham. Top the ham with the cheese, then top the cheese with the second slice of veggie ham [ham – cheese – ham on top of the tofu].
Put a lid on the skillet for just a minute.
Remove lid and carefully flip the entire stack over so the ham is against the skillet. When you see the cheese is melting remove from heat. While still in the pan, using a sharp knife, cut the stack in half.
Spread one half of the hot dog bun with ketchup and mustard and the other half with veggie mayo.
Carefully place the tofu cut stack on the bun. Close and serve.
Notes: This is not a sit down and eat sandwich. It’s a stand over the counter sandwich. It gets gooey, but oh so good!
You could also use a burger bun.
