TOFU HOME FRIES

Leftover baked potatoes fried up with onion and peppers. Seasoned with garlic, rosemary, curry and smoked paprika. Red wine vinegar to tame the glycemic spike? Of course. It tastes great, so we’ll do it. Tossed with fresh vine tomatoes, fresh spinach and House Foods tofu! A late morning delight!

Makes 8 cups

3 T. grapeseed oil

1/2 jumbo sweet onion, peeled and diced into 1/2 inch squares

1 lg. green pepper, cored and diced into 1/2 inch squares

1 t. sea salt


5 leftover baked potatoes – med. size – cut into 3/4 inch cubes (keep the skins on)

2 T. red wine vinegar

1 t. mild curry powder

freshly ground black pepper to taste

2 fresh, ripe tomatoes – those sold on the vine are nice here – cut into 1/2 inch cubes


8 oz. bag fresh spinach leaves

19 oz. container House Foods water-packed firm tofu, rinsed and cut into approx. 1/2 inch cubes

1 t. garlic powder

1 t. ground rosemary

1 t. dry mustard

2 t. smoked paprika

1 t. additional sea salt


In extra-large skillet, over medium heat, melt oil. Add onions, peppers and sea salt, then saute till wilted.

Add cubed potatoes, vinegar, curry, black pepper and tomatoes. Stir to distribute, browning on one surface before flipping to brown other sides of potatoes.

Add spinach, folding into mixture till wilted.

Add tofu cubes, then season the tofu without stirring by adding garlic powder, rosemary, mustard, paprika and salt directly onto the tofu.

Now, mix and flip gently, trying to keep some of the tofu intact, while being sure to evenly color it with the spices.

Continue to cook without stirring till very hot. Serve immediately.


Notes: It’s easy to make home fries when the potatoes are already prepared – as in leftover.

House Foods Tofu is one of the finest tofus on the market today. I particularly like that it has less of a soy taste than others I’ve tried, which means I don’t need to spend a lot of time masking it. Definitely check it out. My local grocery now carries it at my request and it’s selling well – as it should. So I’m a happy cook.

I like also that it comes packed in 4 pieces, making it easier to work with and the package contains 19 ounces – also a benefit, since some companies have gone from 16 ounces to 14 ounces.
