SAUTEED SPIRAL BEETS AND ONION
Great side dish vegetable. Tastes like fatty game. Don’t ask. Just be assured there are no animal products, and enjoy!
3 sm. fresh beets, washed well – cut both ends off flat, then peel
1 med. yellow onion, cut both ends off flat, then peel
Spiralize the onion using the SLICER blade, then spiralize the beets using the CHIPPER blade. See here.
2 T. grape seed oil
freshly ground black pepper
1 T. soy bacon bits
2 T. water
2 T. veggie mayonnaise (I used Vegenaise Original)
fresh cilantro sprigs
In medium skillet, over medium heat, melt oil.
Place beet and onion spirals in skillet. Lift repeatedly with tongs to coat with oil, then using scissors cut the strands into smaller pieces (not too small – a few cuts here and there). Salt and pepper to taste, then saute about 5 minutes, stirring often.
Add soy bacon bits and water. Sizzle, cover and cook 2-3 minutes – no need to stir at this point, just be sure to trap the steam the second the pan sizzles, which is immediately.
Remove cover, add veg mayo, toss to coat, salt to taste, plate, garnish with cilantro sprigs and serve. Pass additional freshly ground black pepper to guest(s).
Notes: This is a very rich tasting side dish, so a salad with a vinaigrette dressing is all you need if you’re looking for a complete meal. Salad and vegetable on the same plate would make a good small plate offering for a restaurant.
