Add garlic, fennel and black pepper. Stir to distribute.
Cook sausage about 2 minutes, stirring often till all liquid evaporates, browning all sides.
Sprinkle agar over sausage crumbles, then stir into sausage to completely incorporate.
Add Catalina Dressing. Stir to evenly distribute. Cook a couple minutes longer, stirring often till very hot and sausage begins to stick together. Remove from heat. Salt to taste.
Oil insides of pretzel burger buns. Place in medium heated skillet, inside down, and keep there till golden brown. Remove from skillet.
Spread both halves of bun evenly with Spreadable Cheese.
Top one half with about 1/4 cup of Pickled Mushroom And Onion.
Using ice-cream scoop (or spoon) scoop about 1/3 cup sausage from pan and place on top of Pickled Mushroom And Onion. Don’t spread it.
Top second half of bun with lettuce, tomato and onion.
Close sandwich and serve. Cut sandwich at your own risk. I did and it came out fine. If you’re not using this type of bun, it could get messy. Use a firm, dense bun for this sandwich. Frying the inside is a nice touch.
Notes: There’s no need for any other condiments. If you don’t have the spreadable cheese, then use something that tastes and textures like American yellow cheese, at room temperature. Cut one slice in half to put on both halves of the bun.
If you don’t have the Pickled Mushroom And Onion, then use a couple bread and butter pickles. But try to make it as it’s shown here for a really special treat!
