WILD TOMATO ZUCCHINI POT
With spiralized zucchini used in place of the pasta! Hot, sweet, timid, lovely, exciting, smooth, bold! A vegetable main dish, soup or stew – no matter what you call it, it’s still wild!
Makes 8 cups
3 T. Liquid Butter Alternative
1 lg. sweet onion – peel, cut off ends, cut into quarters from end to end, then crosswise into 1/4 inch wide quarter rings
2 jumbo green peppers – core, cut into quarters from end to end, then crosswise into 1/4 inch wide strips
1 t. sea salt
1-1/3 lb. fresh zucchini spiralized
14.5 oz. Dei Fratelli Chopped Mexican Tomatoes & Jalapenos
15 oz. can Dei Fratelli Sloppy Joe Sauce
14.5 oz. can Dei Fratelli Stewed Tomatoes
fresh grind black pepper to taste
1 c. water
3-4 long sprigs fresh oregano
2 T. extra virgin olive oil
In large saucepan or pot, over medium heat, melt butter alternative.
Add onion, green pepper and salt. Saute till wilted.
Add spiralized zucchini, tomato products, black pepper, water and oregano sprigs. Stir to incorporate and disperse evenly. Cook till zucchini is tender to your liking. Salt and pepper to taste.
At end of cooking time add extra virgin olive oil. Stir well, then cut some of the extra long strands into shorter lengths in the pot using scissors.
Turn heat off till ready to reheat and serve.
