TOFURKEY ITALIAN SAUSAGE TOMATO SAUCE
Sauteed red onion, green pepper and mushroom combined with fresh zucchini rounds in a Tofurkey Italian Sausage Tomato Sauce. Outstanding flavors and textures!
Makes 13-1/4 cups
1/4 c. extra virgin olive oil
1 lg. red onion, peeled, lg. dice
1 lg. green pepper, cored, lg. dice
14 oz. pkg. Tofurkey Original Italian Sausage, cut into 3/8 inch wide rounds
1 t. Celtic salt
2 t. garlic powder
8 oz. white button mushrooms, washed and coarsely cut into lg. cubes
2, 10 oz. fresh zucchini – cut ends off then cut from end to end in half, then crosswise into very thin slices
28 oz. can diced tomatoes including liquid
16 oz. can tomato sauce
12 oz. can tomato paste plus 2 cans water
1 t. dried oregano
2 t. finely ground fennel seed
1/4 t. red cayenne pepper
1/4 t. ground allspice
1/4 c. Kalamata olive liquid from jar
In extra-large skillet, over medium heat, melt olive oil.
Add red onion and green pepper. Saute till partially wilted.
Add Tofurkey sausage, salt and garlic powder. Toss to evenly distribute, then cook till green pepper softens a little more.
Add mushrooms and zucchini. Toss to coat with oil and disperse in skillet, then cook about 10 minutes.
Add diced tomatoes, tomato sauce, tomato paste plus water. Stir well.
Add oregano, fennel, allspice and Kalamata olive liquid. Stir well, then cook on low heat, uncovered, about 30 minutes.
Salt and pepper to taste and serve.
Notes: This sauce is good all by itself, over pasta or in a submarine sandwich.
