BROILED CHEESE CRACKER CANAPES
When you want something easy but spectacular to serve your guests, give these cracker canapes a try! Soft, melty tangy bites with a perfect cracker crunch!
Makes about 30 cracker canapes
1/4 cup AFC Coral Horseradish Sauce
1/4 c. prepared yellow mustard
1/4 c. chopped sweet onion
1/4 c. strained deli-style dill relish – I used Mt. Olive brand – or use sweet relish – or chopped dill or sweet pickle
1 c. Daiya Mozzarella-style shreds
30 crackers that can be broiled – I used Keebler brand sesame seed
30, 3/4 inch square thin slices Daiya cheddar Farmhouse block
30, 3/4 inch square sweet red roasted peppers
Combine AFC Coral Horseradish Sauce, mustard, onion, relish, mozzarella shreds in bowl and stir to evenly disperse.
Top each cracker with a rounded teaspoon of cheese/pickle mix.
Top with slice of cheddar.
Top cheddar with roasted pepper.
Place cracker canapes on rack over baking sheet and broil 1-2 minutes. Watch carefully. If distracted they’ll all burn. Time 1 minute – maybe they’re done. If not, then look every 15 seconds to make sure there is no char but on the very edge of the crackers.
Remove from broiler. Plate and serve.
Notes: What’s nice about these canapes is that they don’t have to be eaten right out of the oven. Room temperature is as good, since you won’t burn your mouth.
