ROOT BEER DRESSING SAUCE
Barq’s Root Beer and Canada Dry diet Ginger Ale mixed with cocoa, dark brown sugar, Balsamic vinegar, coriander and allspice! Different but Delicious! Serve over salad, fresh sliced fruit (I like banana) or as a dipping sauce for veggie chicken nuggets! How about all three? That’ll put a smile on your Fat-Free Animal-Free Friday!
Makes 4-1/2 cups
12 oz. can Barq’s Root Beer
12 oz. can Canada Dry diet Ginger Ale
1-1/2 c. Balsamic vinegar
1/2 c. dark brown sugar
1/4 c. unsweetened cocoa powder
1 t. pink Himalayan salt
1 t. ground coriander
1 t. cinnamon
1/2 t. ground allspice
1 t. malic acid – flavor enhancer
2 t. guar gum powder – thickener
In large bowl place ingredients, up to and including malic acid, whisking after each addition till smooth.
Sprinkle guar gum on the top surface of the dressing, whisk quickly into the top layer till dissolved, then whisk deeper till thickened. Let set for a few minutes while you do something else, then come back and whisk briskly again till all foam and bubbles disappear and it’s velvety smooth.
Transfer to bottle and refrigerate till ready to use. Leave enough head space for shaking before using.
Refrigerating dressing makes it thicken more. Shake well before using.
