CREAMY CAPONATA SPREAD (GF)
Already made to order this special eggplant appetizer takes a creamy leap into never-never land to land on top of the heap! Mix with Tofutti gluten-free, dairy free cream cheese, and serve with gluten-free Blue Diamond Nut-Thins! Off the planet delicious!! A perfect spread with a perfect cracker. Add a few toppers and the celebration has already begun! Happy New Year to the world!
Makes 1-1/2 cups
5.1 oz. Caponata by ORTI D’ITALIA
8 oz. container Toffuti Better Than Cream Cheese
1/2 t. pink Himalayan salt
1/8 t. celery seed
toppers: fine dice fresh red pepper (sweet)
fine dice Kalamata olive
fine dice red onion
drizzle extra virgin olive oil
sprinkle of Hungarian paprika
sprinkle of fresh grind black pepper
BLUE DIAMOND NUT-THINS, Smokehouse flavor (vegan)
In medium size mixing bowl combine caponata, cream cheese, salt and celery seed. Mash and stir with fork, then spoon, till all ingredients are evenly dispersed.
Transfer to serving bowl.
Top with: fine dice fresh red pepper (sweet), Kalamata olive and red onion.
Drizzle with a little extra virgin olive oil, then sprinkle with Hungarian paprika and fresh grind black pepper.
Place bowl of spread on serving platter with spreading knife, then surround with crackers and serve.
Notes: I haven’t seen caponata aka eggplant appetizer in the grocery store for years. Steve found this, so one of my New Year Celebration snacks was made easy. Since then, I checked and there are other caponatas on sale on amazon.com. Nice.
