AFC HOT DOG EGG SALAD SPREAD
Fresh herbs, walnuts, grated carrot, vegan yeast, added to the ground tofu and meatless hot dogs make the spread more nutrient dense than others we’ve developed. This is our healthier spread! Serve on any bread or as a salad on a lettuce leaf. Tasty as always with enhanced texture from the added ingredients!
Makes 8 cups
13.5 oz. Lightlife Jumbo SMART DOGS cut into chunks
1 c. walnut halves
1 c. fresh curly parsley, some small stems okay
1 c. fresh basil leaves, some small stems okay
2 T. vegan yeast (nutritional yeast)
1 c. peeled, finely grated carrot
2, 12 oz. pkg. extra firm water packed tofu, squeezed and twisted firmly in towel to extract all liquid possible
1/2 c. vegan mayo – I used Vegenaise Grapeseed Oil style by Follow Your Heart (and more if wanted as you use the spread)
1/4 c. prepared yellow mustard
1/2 c. sweet relish, removed from jar with slotted spoon, or drained to remove excess liquid in wire mesh strainer by shaking it back and forth not pressing
2 t. pink Himalayan salt or to taste
1-2 t. garlic powder
1-2 t. onion powder
1/2 t. ground allspice
1/2 t. ground rosemary
1 t. ginger powder
2 t. turmeric powder
fresh grind black pepper to taste – more is better
2 T. light brown sugar
1-2 t. liquid smoke
Place hot dog chunks, walnut halves, parsley, basil and vegan yeast in food processor. Pulse and process till evenly crumbly. Transfer to extra-large mixing bowl.
Add grated carrot and squeezed tofu. Using clean hands toss till evenly distributed and equally sized.
Add mayo, mustard and relish without stirring.
Onto condiments in bowl, place spices, brown sugar and smoke. Now stir to evenly disperse all ingredients and melt spices into spread.
Pack into covered containers and refrigerate till ready to use.
Notes: Use as sandwich spread or scoop onto lettuce leaf and serve as salad.
Note that for the amount of spread this recipe yields, we didn’t use much mayo for the purpose of keeping the total fat content down. Decide whether to add more mayo for each use.
We didn’t use chopped onion and green pepper in this spread as we do with similar recipes. If you’d like to add some by all means do.
