AFC DOWNTOWNER CHICKEN SALAD SANDWICH

Steve said, “good; it’s really good. It tastes like a downtown sandwich.” I knew what he meant. Upscale. Familiar. Trustworthy. A reason to go downtown. The DOWNTOWNER. The downtown vegan. AFC Downtowner. Everywhere, even in the suburbs, all the way to the country by way of rural roads leading to main street and what’s on the corner? AFC Downtowner! The best sandwiches in the world. Actually that was my specialty when I worked in a deli. I could make a mean sandwich beg to be eaten. Every time!

I once planned out in my mind and on paper notes a fast food sandwich shop called 7 SUBS (they had meat on them though). Still, the art of making a sandwich is the same whether you use animal products or not. That was before SUBWAY appeared on the American street. The rest is history.

Makes about 5 sandwiches

approx. 1/2 lb. Delight Soy Chicken popcorn nuggets, thawed and diced

1 Hass avocado, pitted, peeled and cut into cubes

1/4 c. diced onion

1 stalk celery, diced (some celery leaves are a good add-on if you have them attached to your stalks)

2 dill pickle planks, diced (or 4-5 round pickle chips)

1 lg. fresh tomato slice, diced

1 c. walnut halves processed in a food processor with 1 T. light brown sugar, 1/4 t. pink salt, few shakes of liquid smoke

fresh grind black pepper to taste

salt to taste


Combine all ingredients in mixing bowl. Stir well till evenly distributed and avocado and walnuts become the chunky paste holding it all together.

To make the sandwich: Use whatever bread or buns you like. Whole grain bread was up next this morning. Yes, this was breakfast. Lightly toasted or not. Toasted for me, plain for Steve.

Spread 1 slice with prepared yellow mustard and the 2nd slice with veg mayo. Place a mound of salad on one of the breads. Sprinkle with black pepper. Spread salad almost to edge. Close sandwich, cut and serve.


Notes: Yes, it’s okay to serve tomato and dill pickle in the same chicken salad recipe. Burger King does it with burgers. Others sandwich shops do it with every other type of chicken sandwich. So we give it a try and like it.
