

What’s wrong with white food? Who demonized white plants? Stop projecting racism onto plants; they’re not animals. White beans, white pasta, white animal-free cheese. They didn’t choose their color. Eat me! Love those green olives!
Makes 15 cups
1/4 c. extra virgin olive oil
1 c. diced celery, 3/8 inch
1 c. diced green pepper, 3/8 inch
1 c. diced sweet red pepper, 3/8 inch
1-1/2 c. diced sweet onion, 1/2 inch
1 t. salt
1 lb. Beyond Beef Ground, thawed
2 t. garlic powder
1 t. additional salt
15.5 oz. can small white or Navy Beans including liquid
15.5 oz. can Great Northern Beans including liquid
15.5 oz. can Cannellini Beans including liquid
28 oz. can diced tomatoes
11 oz. can LeSueur white shoepeg corn including liquid
DR. WT. 5.8 oz. jar Greek Garlic Stuffed Green Olives including liquid, processed in food processor till evenly mealy
1 t. ground cumin
2 t. ground coriander
1 t. ground fennel seed
2 t. dried oregano
2 t. additional garlic powder
sm. pinch red pepper flakes
fresh ground black pepper
optional: 16 oz. pkg. sm. pasta cooked and drained according to pkg. instruction

1- In large soup pot, over medium heat, melt oil.
2- Add celery, green and red peppers, onion and salt. Saute till edges soften.
3- Add Beyond Beef, garlic powder and 1 t. additional salt.
4- Saute till pink disappears and lightly browned on some sides.
5- Add remaining ingredients, except ADD-ONS, stirring after each addition.
6- Cook on medium-low heat for about 20 minutes.
7- Adjust for salt and serve topped with chopped fresh cilantro.
8– Variation: Serve over small macaroni/pasta. Then top with fresh cilantro and animal-free shredded cheese.
