Brownwood Farms Pepper Jelly

Pepper jelly isn’t something I ever reached for or thought about when shopping. For some reason that day it caught my eye and without hesitation I picked it up and put it in the grocery cart.

My first attempt to use it was on top of a whipped topping on toast. It was so thick and so congealed that it wouldn’t spread. Still, I ate it and liked it.

The next day I spread it on the toast first absent the margarine, then topped it with the whipped topping. Perfect.

Although I like jellies, jams and preserves much thinner in viscosity, this jelly had a melt in your mouth component that I thoroughly enjoyed – and it wasn’t too hot!

I served it on black Russian Toast minus the margarine because of the added whip topping. So I saved a few grams of fat.


RICH’S WHIP TOPPING is widely and consistently available, though not in mainstream grocery stores.

Follow the directions on the carton. It’s already sweetened, so you won’t need additional sugar. Halfway through the whip when it forms soft peaks, I add a small amount of cocoa, and a few drops of liquid smoke.

The cocoa, believe it or not, has the unexpected effect of bringing the cream to stiffer peaks faster. Nice.

Ever wonder why the people over at Kraft foods didn’t expand the JELL-O brand? They make a gelatin, a pudding and a pie filling for cream pies. For three separate desserts. Why didn’t anyone try to combine the qualities of gelatin with the qualities of pudding? Well, tradition never stopped AFC Global from experimenting with a new concept. Here are the results! Combining a juice with the cream produces a gelatin-like cream. You don’t need the actual gelatin nor agar to produce something unique yet familiar and enjoyable!

Oh, and served in a carob cookie cider pie crust! Topped with dairy free whip cream!

Imperial Chicken Salad – delight soy

IMPERIAL CHICKEN SALAD

Not your run of the mill chicken salad! I know I said I wasn’t going to cook on Christmas day, after cooking holiday dishes for two weeks, but Steve bought Lilly Belle five pounds of vegan popcorn nuggets for Christmas and I just had to make a chicken salad out of a portion of it. Technically I didn’t cook – I assembled. Like I said, not your ordinary chicken salad. Imperial!

JELL-O Pistachio Instant Pudding & Pie Filling, ground cacao beans, soy whip topping, apple cider and chia seeds blended till smooth. Chill, top with a spoonful of additional whip topping and a sprinkle of ground cacao bean!
