I’m quite impressed by what you have created. That’s what is so great about fermentation. Flexible and adaptable to each of our needs. I’m playing around with a more “relish” like consistency myself. I would hesitate however to add so much brine. I find it dilutes the flavors. I would still try to stick to a 2% salt and have the mixture create its own brine. I will be anxious to hear how the flavors develop.

Sheila Gredzinski I absolutely love your recipes, you know I do, and what you have shared has helped so many. I have sent girlfriends with families to your page to learn how to cook for those families. Most husbands of my friends, they want a hot meal. And if this helps, it’s all good.
My husband is not vegan but eats so many many vegan meals! And now so do my parents as we have to care for them in these elder years.
Here’s a nice piece of info for you, my mother, on insulin for more than ten years, is reducing her insulin intake. All that insulin, while helping her, is also hard on her organs.
So this cooking thing is not all bad, is it? Thank you for making it all so much easier and so much tastier!
