Barbecue Bean And Cabbage Slaw

BARBECUE BEAN AND CABBAGE SLAW

Pinto bean, green cabbage, peas, red grapes, celery, sweet onion, green pepper and green chilies tossed in a creamy barbecue salad dressing with a protein boost! I can’t stop eating it!

Makes 11 cups salad

Salad Solids: 

3 c. diced green cabbage, 1/2 inch squares

1 c. diced celery

1 c. diced green pepper

1/2 c. diced sweet onion

15.5 oz. can pinto beans, drained and rinsed well to remove all foam

12 oz. pkg. froz. peas, cooked in water till thawed and immediately drained and rinsed till cold

2 c. red seedless grapes, cut in half

4 oz. can mild chopped green chilies – I used LaVictoria brand


In extra-large mixing bowl or huge pot combine all salad solids. Stir to evenly distribute.


Creamy Barbecue Dressing: Makes 4-1/2 cups

18 oz. bottle Original BBQ SAUCE by Savory Collection

14 oz. pkg. water packed firm tofu, rinsed, wrapped in cloth towel and firmly patted to remove excess moisture, not squeezed to break apart (we don’t want it too dry)

1/4 c. prepared yellow mustard

1/2 c. Balsamic vinegar

1/4 c. extra virgin olive oil

1/4 c. dark brown sugar

1 T. liquid smoke

1 t. pink Himalayan salt and more to taste

sev. twists black pepper mill


In blender container combine all ingredients. Blend on low speed, scraping down insides of container. Raise speed to medium then high, scraping insides at intervals. When velvety smooth with no curdle specks, it’s done. Salt to taste, blend again.

Pack in covered jar(s) and refrigerate till ready to use.


Assembly:

Add 1-2 t. salt and lots of black pepper and 1/2 t. celery seed to salad solids. Stir to disperse evenly.

Pour about 2 cups dressing over solids and stir till all ingredients are coated. Adjust for salt. Transfer to serving bowl. Garnish if you like with celery leaves or cut grapes. Serve.


Notes: Remember to dice the veggies, not finely chop them. Dice means fairly uniform in shape and for this salad about 3/8 inch square.

Savory Collection salad dressings and sauces may not be available near you. Substitute your favorite bottled barbecue sauce. Add the other ingredients as instructed.
