CRANBERRY BLACK BEAN SALSA
Our Family Whole Cranberry Sauce, Goya Black Beans and Wilson Produce Sweet Mini Peppers combined with Tostitos Chunky Salsa, fresh cilantro and lemon. Served with UTZ White Corn Tortilla Chips. Wow! My new favorite salsa!
Makes 4 cups
15.5 oz. can black beans, rinsed and drained well to remove all foam (I used Goya brand)
15.5 oz. jar chunky salsa (I used Tostitos Mild Chunky Style Salsa)
14 oz. can whole cranberry sauce (I used Our Family brand)
1/2 c. diced sweet mini peppers (orange, red and yellow), 1/4 inch squares (I used Wilson Produce brand)
1 t. salt
1 t. garlic powder
1 t. ground coriander
2 T. fresh lemon squeeze
1/2 c. coarsely cut fresh cilantro
freshly ground black pepper to taste
extra cilantro for garnish and if desired a couple mini peppers
lg. bag utz White Corn Tortillas
In large bowl combine ingredients up to and including black pepper, stirring well after each addition. cover and refrigerate till ready to serve.
Serve in bowl garnished with extra cilantro and sweet mini peppers as desired. Surround with tortilla chips and watch your guests keep returning for more! They’ll all be talking. Cranberry??!! Wow, this is good! Of course they’ll want the recipe. Just direct them to this site. Thank you.
Notes: If served within a few hours of chilling, the salsa will be a bit thinner than if left overnight whereby the beans absorb some of the liquid. Tastes great either way.
There’s no need to reserve this special salsa for the holidays – serve it all year.
I got the idea for this recipe at the grocery store when I noticed diced tomatoes and cranberry sauce sitting side by side on the shelf on an end-cap with various pastas. A light bulb when off in my mind and I thought of tomatoes and cranberries, then tomato salsa and cranberries. Looking back and looking at the label I can see why the stock person thought they were tomatoes (see the can below). The next time I went into the market the cranberries were no longer in that location – beside the tomato products. But in my mind it stuck and voila – Cranberry Black Bean Salsa! Thank you stock person, whoever you are. Your mistake was the world’s gain! Now the world has the recipe.
Sometimes when something is misplaced or out-of-order, it makes you think, and something new and good emerges from that incongruity.
